The 081 Cosacca Recipe
Quantities for 1 Pizza
100g celery
100g carrot
100g white onions
200g of mixed tomatoes
50g of Pecorino cheese
Recipe
1. Chop the celery, white onions and carrots
2. Shave the Pecorino cheese
3. Heat the pan with olive oil and fry the celery, onions and carrots until soft
4. Add a tin of chopped tomatoes
5. Slow cook for approx 2 hours (the longer the better)
6. Let the sauce cool and then blend until texture is smooth and thick
7. Shape your pizza dough or ready bought base (if you don’t have time) and distribute the sauce evenly
8. Cook at 220 degrees for 15 minutes
9. Top with as much Pecorino cheese as you like and fresh basil.
